Sweet And Spicy Pork
This is a snazzy recipe I got from a weight loss cookbook. Not only is it low in calories, but it tastes great. Goes really well with couscous and a veggie!
Ingredients:
1/2 t ground cumin
1/2 t ground cinnamon
1/2 t salt
1/4 t ground allspice
1/8 t garlic powder
1/8 t ground chipotle powder*
1 pork tenderloin (1.25 - 1.5 lbs)
olive oil
2 T honey
1 T minced garlic
1.5 t hot-pepper sauce
Directions:
Preheat oven to 350. Combine and mix cumin, cinnamon, salt, pepper, allspice, garlic powder, and chipotle pepper. Rub pork evenly with olive oil and then rub the spice mixture evenly over the pork. Set aside
Combine and whisk the honey, garlic and hot-pepper sauce. Lightly mist skillet with olive oil. Place pork in pan and quickly brown all sides. Remove pork and baste evenly with honey mixture. Roast in the oven for 16-18 minutes.** Cut pieces at 45 degree angle and enjoy this succulent dish.
*can substitute cayenne pepper, but use half the suggested amount
**Needs to roast until internal temperature of 160 degrees, last time I used a fatter tenderloin and it took 40 minutes
