2nd Recipe
From Brandon we get Slow-Cooker Pepper Steak
Serves 4
1 pound boneless top round steak
2 cups fat-free, no-salt-added beef broth
1 medium red bell pepper, cut into 1-inch strips
1 medium green bell pepper, cut into 1-inch strips
1/2 medium onion, cut into 1-inch strips
2 tablespoons soy sauce (lowest sodium available)
1 teaspoon toasted sesame oil
1/4 teaspoon crushed red pepper flakes (optional)
1 cup uncooked quick-cooking brown rice
1 cup cherry tomatoes, whole or halved
Discard all visible fat from the steak. Cut into thin strips. Put with the broth, bell peppers, onion, soy sauce, sesame oil and red pepper flakes in a 3 1/2 to 4-quart slow cooker. Stir. Cover and cook on high for 2 to 3 hours or on low for 6 to 8 hours. Five minutes before the end of the cooking time if cooking on high or 15 minutes before if cooking on low, stir in the rice. Just before serving, stir in the cherry tomatoes.

It appears Easter was not kind to us as a group. This week the group gained .7 pounds. Lets do better next week.
Easter, honey ham and funeral potatos didn't stop some individuals from burning the fat.

Week 2 Results

We improved this week as a group. At the beginning of the week we weighed 3890.8. We now weigh in at 3862, which is a loss of another 2%. A little better than last week's meager 1.24%.

Movies
I have been trying to think of some sweet movies we could watch to not only entertain us, but to also inspire us to do better. As far as an actual movie about weight loss, the only one I can remember which vaguely fits the description is "Don't Tell Her it's Me" with Steve Guttenberg. I don't remember everything, but I know it is about a fat guy trying to do a makeover to get the girl. I remember him running while being followed by a car with his sister in it calling him fat. Now that is motivation. He also listened to a sweet Walkman.
Also, though the guy isn't really fat, "Run Fat Boy, Run" is also very good. Both inspiring and really entertaining.

The 1st Recipe
Sweet And Spicy Pork
This is a snazzy recipe I got from a weight loss cookbook. Not only is it low in calories, but it tastes great. Goes really well with couscous and a veggie!
Ingredients:
1/2 t ground cumin
1/2 t ground cinnamon
1/2 t salt
1/4 t ground allspice
1/8 t garlic powder
1/8 t ground chipotle powder*
1 pork tenderloin (1.25 - 1.5 lbs)
olive oil
2 T honey
1 T minced garlic
1.5 t hot-pepper sauce
Directions:
Preheat oven to 350. Combine and mix cumin, cinnamon, salt, pepper, allspice, garlic powder, and chipotle pepper. Rub pork evenly with olive oil and then rub the spice mixture evenly over the pork. Set aside
Combine and whisk the honey, garlic and hot-pepper sauce. Lightly mist skillet with olive oil. Place pork in pan and quickly brown all sides. Remove pork and baste evenly with honey mixture. Roast in the oven for 16-18 minutes.** Cut pieces at 45 degree angle and enjoy this succulent dish.
*can substitute cayenne pepper, but use half the suggested amount
**Needs to roast until internal temperature of 160 degrees, last time I used a fatter tenderloin and it took 40 minutes
